Moist Jell-O Cake
rec.food.cooking/Michele A. West (1996)
One of my favorite recipes for this time of year is a Jell-O Cake. It's easy, fast and not too rich.
1 yellow cake mix
1 small package (3 oz) of any fruit flavored Jell-O
4 eggs
2/3 cup water
1/2 oil
1 (12 oz) juice concentrate, thawed (flavor to compliment the Jell-O flavor)
With electric mixer, beat together the cake mix, Jell-O, egg, water, and oil for about 3-4 minutes until very smooth. Bake in a greased Bundt pan at 350F for 50-60 minutes or until cake tests done. Remove from oven and set pan on rack to cool slightly. While cake is still in the pan pour the juice over the cake (poke small holes in the cake to help it to sink in!) Invert cake out of pan about 10-15 minutes after pouring juice on.
