Recipe: No-Brainer Hot Potato Salad

No-Brainer Hot Potato Salad

I know I read this in some cookbook once upon a time, but I can't remember where.

4 or 5 potatoes, whatever kind you like
3 slices bacon cut up*
1 small onion, chopped
1 egg, slightly beaten
1/2 cup cider vinegar
salt and pepper to taste

Peel potatoes or not, your choice. Slice about 1/8 inch thick and boil until done, about 15 to 20 minutes. Drain and reserve.

Saute bacon and onion until bacon is done and onion is limp. Add remaining ingredients and cook until the egg thickens. Pour over potatoes and serve immediately. This is not bad cold either.

*I think the original recipe said to drain the bacon grease and mix some vegetable oil with the egg and vinegar, but I hated to waste it.
