Recipe(tried): Mujeddrah for Denise

Denise,

Here is a recipe you can try in addition to Julimarie's Muaddas if you like!

This is a recipe I got a few months back on the kitchen link. I have never had authentic Mujeddrah, but I made it for my husband who is Kuwaiti and he said it was a good rendition. I added the lemon juice to the recipe, so you can decide if you want to include it or not. Good luck!

MUJADDRAH

1 1/2 Cups orange lentils, rinsed
1 Cup uncooked rice
2 Medium onions, chopped
1/2 Cup olive oil
1 Tbs. salt
1/4 tsp. cumin
1/2 tsp. allspice
Juice from of a large lemon (optional)

Boil the lentils until tender. Mash and strain them into a separate pot. Add the rice, salt, spices, and lemon juice (if using), mix well. In a pan, saut the chopped onions in oil until golden. Add them with the frying oil to the lentils and rice. Bring the mixture to a boil with enough water to cover and simmer over low heat for about 10 minutes, until the rice is cooked, stirring regularly to prevent sticking.
