Hi Kelly
I've been a vegetarian for 11 years (since I was 13) and I just myself am learning to cook healthy vegetarian food. You expressed an interest in eggplant and healthy food. I would highly recommend Lebanese food. I discovered it here in Kuwait and it's my new favourite. I'm sure in America they have Lebanese cookbooks out for sale. The fair is generally inexpensive and easily prepared. And it's delicious!! Please, please take this advise. I wish some one had turned me on to it earlier!
