Recipe(tried): Muaddas

Misc.

Hi Denise
I figured it out. It's called muaddas in Kuwait and it's eaten with dukkous - a tomato sauce. A woman I work with brought this in last year for me to eat for breakfast with ful and bread. Yikes, huh?

2 cups basmati rice
1/2 cup lentils (brown or green)
1 large onion
1/4 cup oil
4 cups boiling water
salt

1. Wash the rice in several changes of water until the water runs clear. Drain it well.
2. Pick over and wash the lentils. Drain well.
3. Using a deep pan, heat the oil and then add the onion. Fry until it's transparent and a little brown. Add the rice and lentils and saute over med. heat for a couple minutes.
4. Add the boiling water and salt. Return to a boil then stir occasionally. Simmer over low heat for about 45 minutes.
5. Remove the pan from the heat, take off the lid, put instead a couple of paper towels (or a light dish towel), then put the lid back on and leave like this for a few minutes before serving. The recipe I have for the dakkous uses Baharat, a spice mix. Do you have that? I have instructions for it that make about 2 cups.

I haven't prepared the muaddas recipe myself, but I've had the results and it's good.

Truly
