Recipe(tried): My Family's New Year's Day Brunch
Holidays, CelebrationsOkay, y'all,,,while I have my family's cookbook out, thought I would include our brunch menu too. These are some of our favorite family's recipes throughout the years and we think they are great. Sometimes, we do the sauage egg casserole, but I will post that for Easter.
Terri's Sausage and Crescent Roll Casserole
Diane's Cheese Grits
Lots of scrambled eggs
Tons of fried bacon
Mama Doile's curried fruit
Gan's overnight creme caramel french toast
Orange juice and mimosa's
Bloody Mary's
Coffee
Milk
Terri's Sausage and Crescent Roll Casserole
2 cans crescent rolls
2 lbs. sausage
2 8-oz pks. cream cheese
Brown, rinse and drain sausage. Add cream cheese and heat until melted. Line a 13x9x2 inch pyrex casserole dish with 1 pkg of crescent rolls. Pour in sausage mixture. Top with remaining crescent rolls. Bake at 350 degrees for 20 minutes or until brown. Can be made the day before, recipe can also be halved, using a 8x8 pan. These are delicious and the grandkids love them...big kids too, ha.
Diane's Cheese Grits
1 cup grits (cook according to pkg. directions)
1/4 lb. butte
1 roll garlic cheese (stirred into grits until dissolved)
Add 2 eggs beaten and enough milk to make 1 cup
Mix and add salt to taste...1/2 tsp.
1 cup grated cheddar cheese.
Bske in covered buttered casserole for 45 minutes at 300 degrees. Uncover and add 1 cup grated cheddar cheese. Bake uncovered for 10 minutes.
Mama Doile's Curried Fruit
Drain 1 large can of peaches,1 can pear halves,1 can apricots and 1 can pineapple chunks or slices. Arrange together closely in 9x13 inch pyrex.
Mix together 1 1/2 cup light brown sugar
3/4 cup butter
scant 1 TB curry powder and heat until butter melts.
Pour over fruit and bake at 350 degree oven for 30 minutes.
MUST SET OVERNIGHT. Preheat to serve.
Gan's Overnight Creme Caramel French Toast
1 cup brown sugar
1/4 cup butter
1/2 cup light corn syrup
Melt butter and corn syrup together. Stir in brown sugar and bring to a boil. Let boil for 2 minutes, remove and stir down to thick syrup. Pour into baking pan and chill for 20 minutes. I use 13x9 inch pyrex.
12 slices thick french bread
8 large eggs
3 cups low-fat milk
1 Tbsp. vanilla
1/2 cup sugar
1 Tbsp. cinnamon
1/2 tsp. ground allspice
Place bread on top of caramel mixture. Blend in blender rest of ingredients until smooth. Pour over bread.
Cover and refrigerate overnight.
Bake at 350 degrees for 45 minutes to 1 hour.
Invert over platter. sprinkle with powdered sugar.
This is also wonderful without the caramel sauce....just serve with maple syrup and powdered sugar. A favorite recipe!!
For some reason, being at our cabin makes our appetites huge, but we usually have a late brunch and then only dinner. Of course, with lots of snacks in between!!
