Recipe(tried): My husbands Jerky

No I have never gotten sick from Jerkey.. We use beef! Now I was told that Beef doesn't have to be cooked so that the center is all brown it could be left kinda pink... by that I mean a very very light pink almost brown!
Here is our reciepe for Beef Jerky made up by my husband! sirlion roast (that is kinda expensive..but very tender)
soya sauce to taste!
liquid smoke about 1/2 the bottle
brown sugar depending on the size of the meat, I use about 3/4 cup for a Meduim size roast
finely chopped garlic adjust to your taste
a couple dashes of peper if you don't like spicey jerky than omit!
Marinate for at least a day (we marinate for 2-3 days!)
And there you have it.. oh one more thing, try drying the meat without the cooking sheet just use your oven racks (for no mess place tinfoil or a cookie sheet at the bottom of the oven to catch drips)
You are cuting it the right thickness, although I would probably dry a little longer, that is only me though!
The liquid smoke adds a wonderful flavor! the same you would get from a smoke house! Good luck and let me know what you think!
