VENETIAN POTATOES (Not Beaches)
9 red potatoes
6 tablespoons butter
3 cups grated sharp Cheddar cheese
3 cups sour cream
1/2 cup chopped green onions
Salt and pepper to taste
Boil potatoes; chill, peel and grate into large bowl; set aside.
Preheat oven to 350 degrees F. Butter a 3-quart casserole.
In medium saucepan over low heat, combine butter and cheese and stir until melted. Remove from heat and blend in sour cream, onions and seasonings. Pour over potatoes and mix well. Place mixture in prepared casserole; dot with additional butter.
Bake 45 minutes at 350 degrees F. Freezes well.
