Jane, I don't know if you have your own recipe, but here is the one I use. To get pastel colors you just need to use 1 drop of liquid food coloring. I have not done lavender ones with liquids, but I have used paste food coloring for them. To color using paste food coloring, just get a lavender or purple paste. Dip a clean, dry toothpick into the coloring, then rub into your mint mixture. A little goes a long way and you can always go darker, so use just a tiny amount at first and adjust to get your proper color. Paste food coloring can be bought at any Wal-Mart or craft store. Look in the craft section where they have the Wilton cake decorating supplies to find it.

NO COOK MINTS

4 3/4 cups powdered sugar, sifted
1/3 cup corn syrup
1/4 cup butter, softened
1 tsp peppermint extract
1/2 tsp salt
red and green food coloring

Combine first 5 ingredients and kneed until smooth. Divide into thirds.

Knead one drop of red food coloring into one third of the mints, one drop of green into one third and leave one third white.

Shape into small balls and flatten with a fork onto waxed paper lined baking sheets. Let dry several hours.

Yields 72 patties
