MED - I have a similar method of hard-boiling eggs ... except mine was for the purpose of (laziness) not having to watch the clock.
I put the eggs in a pan of vinegar water. When it comes to a boil, I put a good-fitting lid on the pot, turn off the burner, and let it sit there for 20-30 minutes. No problem in peeling, green yolks, etc.!
