Recipe(tried): Potato Loaf (using cottage cheese, mushrooms and shredded potatoes)

3/4 cup fat free cottage cheese
2 1/2 cups coarsely chopped mushrooms
1/2 cup grated Parmesan cheese
3/4 cup thinly sliced onion
3 egg whites, room temperature
1/3 cup bread crumbs
1/2 teaspoon marjoram
1/4 teaspoon salt
1/4 teaspoon ground black pepper
6 medium potatoes, peeled and shredded
Preheat oven at 400 degrees F. Prepare a loaf pan with cooking spray.
In a blender, puree cottage cheese for 1 minute or until smooth.
In a mixing bowl, combine pureed cottage cheese with remaining ingredients, except the potatoes.
Fold in potatoes. Transfer mixture to prepared pan.
Bake for 1 hour and 10 minutes or until firm.
Makes 8 servings
