Recipe: Nut Bars

I saw someone provided a recipe for nut bars with a cake mix crust. I have a recipe I have tried that I think would be even better. It came from the Joy of Cooking.

Nut Bars

About 48 1x2-inch sticks

Preheat oven to 350.

Cream until well blended:
1/2 cup butter
1/4 cup sugar
Beat in well:
1 egg
1/2 tsp. vanilla

Combine:
1 1/4 cups siften all-purpose flour
1/4 tsp salt

Add these dry ingredients in about 3 parts to the butter mixture, blending them well. Use your had to pat the dough evenly in a greased 9x12-inch pan. Bake about 15 minutes.

In a heavy sauchpan, beat until they begin to froth:
4 egg whites

Stir in:
2 1/4 cups finely chopped pecans
1 cup sugar
1 1/2 tsp. cinnamon

Cook and stir this mixture over low heat. After the sugar has dissolved, increase the heat slightly. Stir and cook until the mixture leaves the sides of the pan, but remove it from the heat before it is dry. Spread it over the pastry base. Bake the cake about 15 minuts longer. When cool, cut into sticks.
