Narie/IL (08:53:05) : Fluffy Recipe Aid Frosting
1/2 cup water
1 1/2 tbsp. light corn syrup
1 1/2 c. sugar
1/2 tesp. cream of tartar
1/2 teaspoon salt
2 egg whites
1 1/2 teasp. vanilla
Place water, corn syrup, cream of tartar, sugar and salt in a sauce pan. Stir over medium heat until sugar is completely dissolved, forming a syrup.
Place egg whites in a bowl. Attach bowl and wire whip. Turn to speed 10 and whip until egg whites begin to hold shape, about 45 seconds. Continuing on Speed 10 gradually add hot syrup in a thin steady stream about 1 to 1 1.2 minutes. Add vanilla and continue whipping about 5 minutesor until frosting loses gloss and stands in stiff peaks, Use immediately.
Yield 3 cups

1 lb confectioners sugar
6 Tb butter
1/2 c insweetened cocoa
1/4 c milk
1 Tb vanilla
1/4 tsp salt
1 c chopped pecans
In medium saucepan, heat sugar, butter, cocoa, milk vanilla and salt over low heat, stirring until smooth. Stir in nuts. Spread mixture quickly in buttered 9x5" loaf pan. Cool; cut into squares. Makes 2 dozen.

2 CUPS SUGAR
1 CUP (2 STICKS) BUTTER
1 CUP BUTTERMILK
4 EGGS
1 TSP SODA
1 TSP (HEAPING) BAKING
POWDER
3-1/2 CUPS CAKE FLOUR
1-1/2 CUPS (NOT JELLY) bLACKBERRY JAM/PRESERVES
3 TSP CINNAMON
3 TSP ALLSPICE
1 TSP NUTMEG
Cream sugar and butter add eggs. Cream thoroughly. Sift all dry ingredients together 3 times.
Add alternately with buttermilk to creamed mixture. Add jam and mix thoroughly. Bake in 4
(four) layers in greased layer pans. Bake at 350 F 20-25 minutes. Put together with seven minute icing.
NOTE: Make a 4 layer cake or two 2 layer cakes. Yield: 12 Servings

Blackberry Jam Cake
Yield: 6 servings
1/2 c Sugar
1/4 c Butter or Margarine
2 ea Large Eggs
1 c Unbleached All-purpose Flour
1 t Ground Cinnamon
1/2 t Baking Soda
1/4 t Ground Cloves
1/4 t Ground Nutmeg
1/3 c Butter/Sour Milk
1/2 c Seedless Blackberry Jam
1/4 c Chopped Walnuts
--CARMEL ICING------
2 T Butter or Margarine
1/2 c Packed Brown Sugar
3 T Milk
1 3/4 c Sifted Powdered Sugar
Cream together sugar and butter or margarine. Beat in eggs. Stir
together flour, and spices; add to creamed mixture alternately with
butter/sour milk, beating til well blended after each addition. Fold in
blackberry jam or preserves and nuts leaving swirls of jam. (DO NOT
OVERMIX) Turn into greased and lightly floured 9 x 9 x 2-inch baking pan.
Bake at 350 degree F. oven 25 minutes or until done. Cool completely.
Frost with Carmel Icing.
CARMEL ICING:
In small saucepan, melt butter or margarine; stir in brown sugar. Cook
stirring constantly, til mixture bubbles; remove from heat. Cool 5
minutes. Stir in milk and blend in powdered sugar; beat til spreading
consistancy is reached.

1 package manicotti pasta -- cooked,drained, cool
2 pounds beef
1/4 pound Italian sausage -- removed from casing
1 small onion -- chopped
1/2 teaspoon salt
1/2 teaspoon oregano
1/4 teaspoon pepper
1 can spinach -- cooked, drained
2 eggs -- beaten
1/4 cup Romano cheese
1 cup bread crumbs
1 1/2 cups spaghetti sauce
1 cup cheese sauce -- Romano or Jarlsberg
Boil Manicotti shells according to package directions. Drain and cool .
Saute first six ingredients. Crumbling meat.
Remove from heat. Add spinach, eggs, Romano and bread crumbs.
Stir until mixed.
Stuff meat mix into manicotti shells. Place in buttered casserole dish in a single layer.
Top with spaghetti sauce. I use Grisanti's recipe. But you may use sauce with no meat.
Top with cheese sauce. I make cheese sauce with a white cheese rather than yellow.
Bake for 30 minutes at 375 degrees.

Green-and-White Lasagne
Serves 10 to 12
6 pieces Lasagne, uncooked
1/2 cup chopped onion
2 tbsp. margarine
2 tbsp. cornstarch
1 tbsp. dried parsley flakes
1 tsp. dried basil, crushed
1/4 tsp. garlic powder
1/8 tsp. ground nutmeg
2 cups skim milk
1 10-oz. package frozen chopped spinach, thawed and drained
1 2 1/4-oz. can sliced pitted ripe olives, drained
1 15-oz. carton part-skim ricotta cheese
1 beaten egg
1 8-oz. package shredded mozzarella cheese
1/2 cup grated Parmesan cheese
In a medium bowl, stir together ricotta
and egg. Add mozzarella and half of the
Parmesan; mix well.
Preheat oven to 350 F. Arrange three
of the lasagne pieces in the bottom
of a greased 12 x 7 x 2-inch baking
dish. Top with half of the spinach
mixture and half the ricotta mixture.
Repeat layers.
Top with remaining Parmesan cheese.
Bake for 40 minutes or until mixture
is bubbly. Let stand 10 minutes.
KellyWA (06:50:20) : The Traditional Green Bean Casserole
Servings: 4
1 can Green beans, french style
1 can Cream of Mushroom soup
1 can Onion rings
In casserole dish mix beans and soup. Top with onion rings. Heat in moderate oven for 20 minutes. (This is also good with a layer of shredded cheese under the onion rings.)
MOM'S CORN PUDDING

My mom always made this Corn Pudding on holidays and special occasions. It is sooo EASY, and now I make it for family get togethers. It's great for potlucks and company too. I get requests for this recipe all the time. Delicious!
1 (1 lb) can cream style corn (2 1/2 cups)
1/3 cup sugar
2 tbsp flour*
1/2 cup milk (can use fat free)*
1 tsp. salt
1/8 tsp. ground black pepper
2 tbsp. butter or margarine, melted
2 eggs, beaten (can use egg substitute)
*I mix milk and flour together before adding to other ingredients - this prevents lumps.
Mix all ingredients, except melted butter or margarine. Put in a greased baking dish (about 1 to 1 1/2 quart). Pour melted butter or margarine over top.
Pudding tends to bubble over in oven so you may need to use cookie sheet underneath dish. Bake in preheated 450 degrees F oven for 20 minutes. Reduce heat to 375 degrees F and continue baking for 45 minutes or until firm. You can cover or not, top will brown.* Check for doneness with knife - it should come out clean.
*Center of pudding takes longer in tall casserole dish (that's when I cover it).
You can double or triple this recipe. Enjoy!

This is an old Georgia recipe from my sister and it is heavenly!!
3 sweet potatoes
1 cup sugar
2 eggs
1 stick butter, softened
1 tsp. vanilla extract
Crunch Topping: 1/3 cup melted butter
1/3 cup flour
1 cup brown sugar
1 cup chopped pecans
1 tblsp. cinnamon
Boil potatoes til tender. Take skin off when cooled and able to handle. Put in a large bowl and whip them til fluffy adding all other ingredients. Pour into a buttered casserole and top with the crunch topping. Bake at 350 for 45 minutes.

1 pkg. 8 ozs. noodles (fine or medium)
1 onion, chopped
8 ozs. sour cream
2 pkg Birds Eye Creamed Spinach, thawed and cooked accord. to dir.
2 eggs, beaten
bread crumbs to sprinkle on top
1 stick butter
salt and pepper to taste
Saute your onions until golden in 1/2 stick butter. Cook noodles according to directions on pkg. Drain noodles and toss with the other 1/2 stick of butter, blend with the spinach, sour cream, sauteed onions and eggs. Salt and pepper to your taste. Blend well. Pour into a buttered casserole dish and sprinkle with the bread crumbs. Bake 350 for 45-60 minutes. YUMMY!!!
This recipe can easily be doubled.

1 large cake of yeast
6 1/2 cups of silfted flour
1/2 cup of sugar
1/2 teaspoon of salt
1 tablespon of baking powder
2 1/4 cups of shortening (Crisco)
4 eggs
1 can of Carnation milk
Dissolve yeast in 1/4 cup of warm water, add 1/2 teaspoon of sugar.
Mix flour, surgar, baking power and Crisco as for pie dogh.
Beat eggs slightly, heat canned milk until lukewarm, then add eggs, milk and yeast into flour. Knead well, divide dough in 6 pieces. Put each piece in waxpaper and refrigerate overnight.
Grease cookie sheet. Roll first piece of dough, place on cookie sheet. Spread with apricot filling.
Roll second pice and place on apricot filling. Spread with date filling.
Roll third piece of dough and plce on date filling.
Prick all layers ;with fork.
This recipe makes two (2) cookie sheets.
Bake at 325 degrees for 45 minutes.
Apricot filling: Cover two (2) 1# boxes of apricoates with water, cook until tender. Mash, cool and then add 1 cup of sugar.
Date filling.
Cover two (2) 1# boxes of dates with water, Cook until soft. Mash, cool and add 1 1/2 cupgs of chopped nuts.
Icing:
Cream 1/2 cup of margarine
1 small egg
Cream together and add 1 box powdered sugar (1#) a little at a time. Add 4 tablespoons of milk and 1 teaspoon of vanilla. Cream well, spread on cake, sprinkle with ground nuts or cocoaanut.
Cut cake into diamond shape pieces.
This recipe is worth the trouble.

3 3/4 Cups Flour

1 Cup Margarine
2 Cups Sugar
2 Eggs
1/4 Cup Milk

3 Tbs. Sugar
1 Tsp. Cinnamon
1. Stir together flour, baking soda, cream of tartar, and salt. 2.
Beat margarine and sugar together until fluffy. 3. Add eggs, milk,
and vanilla; beat well. 4. Add dry ingredients to beaten mixture and
beat until well blended. 5. Shape into 1 balls; roll in a mixture
of 3 Tbs. of Sugar 1 Tsp. cinnamon. 6. Place on cookie sheet,
flatten slightly. 7. Bake 375 for 8 to 10 minutes.
Dawn-NY (10:33:44) : Iced Lemon Shortbread Bars
3/4 cup butter, softened
1/2 cup powdered sugar
1 1/2 cups flour
1/4 teaspoon salt
1/2 teaspoon vanilla
2 tablespoons grated lemon zest
2 tablespoons sugar
Cream the butter and powdered sugar until light and fluffy. In a separate bowl, sift together the flour and salt and add to the
butter mixture. Add the vanilla and lemon zest and blend thoroughly. Gather into a ball and wrap in plastic wrap. Refrigerate 4-6 hours.
Remove from the refrigerator and allow to soften lightly. Press into an 8" square pan. Score dough into 16 portions. Chill uncovered for 45 minutes.
Preheat oven to 325 degrees F. Bake until the shortbread is starting to color slightly, approximately 20 minutes. Cool. Cut the shortbread into 16 bars.
Make icing using Domino's lemon-flavored powdered sugar with enough milk to a consistency that is easy to spread. Can be frozen - if doing so, frost when immediately prior to serving.

1 1/2 cups all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon baking soda
1/4 teaspoon salt
1/2 cup butter or margarine
1 cup granulated sugar
1/2 cup firmly packed light brown sugar
1 egg
1/4 cup milk
1 tablespoons lemon juice
1 1/2 cups fresh or frozen cranberries, stemmed and chopped
1/2 cup chopped walnuts
Preheat oven to 375 degree F. Measure flour, baking powder, soda and salt into a bowl; stir with a fork to mix.
Cream butter and sugars in a large bowl until fluffy; beat in egg, milk, and lemon juice. Stir in flour mixture, a little at a time, until well blended; stir in cranberries and walnuts. Drop dough by teaspoonfuls, about 1 inch apart, onto greased cookie sheets. Uncooked dough may be frozen for later baking. If doing so, allow to come to room temperature prior to baking.
Bake 15 minutes, or until firm and golden. Remove from cookie sheets to wire racks; cool.
Yield: 4 dozen cookies

4 eggs
1 1/2 cups Karo Light or Dark corn syrup
1 1/2 cups sugar
3 Tablespoons butter, melted
1 1/2 teaspoons vanilla
2 1/2 cups pecan halves or coarsely chopped pecans
Non stick spray
2 1/2 cups flour
1 cup cold butter, cut in pieces
1/2 cup confectioner's sugar
1/4 teaspoon salt
Preheat oven to 350 . Prepare cookie crust (bottom ingredients). Spray a 15 x 10 x 1" baking pan with spray. In large bowl at med. speed, beat flour, butter, sugar and salt
until coarse crumbs. Press firmly and evenly into prepared pan and bake 20 min. or until golden. Top with the filling (ingredients above). Finish baking according to directions.
Filling: In large bowl, beat eggs, corn syrup, sugar, butter. and vanilla until well blended. Stir in pecans. Pour over hot crust; spread evenly. Bake 25 min. or until firm around edges and slightly firm in center. Cool completely on wire rack before cutting. Can be frozen.
Makes 48 bars
