Recipe: Orange-Fennel Macaroni Salad

Orange-Fennel Macaroni Salad

Makes 8-12 servings

16 oz medium shell pasta
3/4 cup mayonnaise
3 Tbsp orange juice
2 Tbsp vinegar (preferably red wine)
1 Tbsp grated orange zest
2 tsp fennel seeds lightly crushed
1 tsp salt
1/4 tsp pepper
1 pint cherry tomatoes halved, about 3 cups
3 ribs celery, chopped, about 1 1/2 cups
1 green pepper, chopped
1/2 cup packed fresh basil leaves, thinly sliced
3 scallions, chopped, about 1/3 cup
2 jalapeno peppers, seeded and minced

Cook pasta according to package direction. Drain, rinse under cold water. In large bowl combine mayonnaise, orange juice, vinegar, orange zest, fennel seeds, salt and pepper. Add pasta and remaining ingredients, toss well to coat.
