Sour Cream Potato Salad

This potato salad recipe is our favorite. I can guarantee that your friends will want a copy when they try it.

Sour Cream Potato Salad

6 cups cooked, sliced potatoes
1/3 cup clear French or Italian dressing

While potatoes are warm, pour dressing over and then chill 2 hours.

3/4 cup sliced celery
1/3 cup sliced green onion
4 hard-cooked eggs

Add celery and onion to potatoes. Chop egg whites; add. Sieve yolks; reserve some for garnish.

1 cup mayonnaise
1 cup sour cream
1 1/2 tsp horseradish mustard (optional)
salt to taste
celery seed to taste (optional)

Combine remaining sieved yolks with mayonnaise, sour cream and mustard. Fold into salad. Add salt and celery seed to taste. Chill 2 hours.

Optional finishing touches:
1/3 cup diced, pared cucumber
1/3 cup hickory-smoked bacon, cooked, crumbled

Just before serving, stir in cucumber and bacon. Garnish with crumbled yolks and bacon.

Note: Either salad dressing works well with this. I like the French best, but the Italian looks better. I usually go for the looks.
