ZUCCHINI CASSEROLE
3 med. zucchini, sliced 1/4" thick
3 med. carrots, grated
2 sm. onions, chopped
10 oz. undiluted cream of chicken soup
1/2 cup. sour cream
3/4 cup. croutons
Saute carrots & onions in a little butter until limp. Cook zucchini for 5 minutes in boiling water. Drain. Add sour and sour cream to carrots & onions. Gently add zucchini and 1/2 cup croutons. Mix gently, pour into buttered 9X13 pan. Top with the rest of the croutons. Bake 25 minutes at 350.
