Recipe(tried): Orange Slice Fruit Cake Recipe
Misc.Beverly, I just ran across you ISO ad for Orange Slice Fruit Cake. I know it's too late for this year's holidays but maybe you can use it next year. My mother makes this every year and it's good.
Orange Slice Fruit Cake
4 cups flour 1 lb chopped dates
2 sticks butter 1 lb chopped candied fruit
2 cups sugar 2 cups chopped nuts
4 eggs small jar (4oz.) marachino cherries
1 tsp soda 1 lb orange slices, chopped (cut with scissors
1/3 tsp salt in to 3 or 4 pieces per each slice.)
1 1/2 cups buttermilk 1 can coconut
Cream butter and sugar and add one egg at a time. Beat well, add 1 cup buttermilk, beat well. Then add soda to other 1/2 cup buttermilk and stir in mixture. Add salt and 3 cups flour. Sprinkle last cup of flour onto dates, nuts, fruit, cherries, & orange slices. Stir into mixture along with coconut. Line tube pan with brown paper and grease well with Crisco. Bake 2 12 hours at 275 degrees. While cake is hot, pour icing over it. Let set 1 to 2 days to soak up icing before cutting. This always makes a tube cake and has some batter left over to make a loaf.
Icing
1 1/2 cups fresh orange juice, 2 1/2 cups regular sugar. Boil 7 minutes and pour over hot cake while still in tube pan.
