Recipe: Fruited Ham on Skewers (using oranges, pineapple, and apple)

FRUITED HAM ON SKEWERS

12 ounces fat-trimmed smoked ham steak, cut 1-inch cubes
2 seedless oranges, in sections
1 (8 ounce) can juice-packed pineapple chunks, juice reserved
1 unpeeled red apple, cut into chunks
1 tablespoon lemon juice
2 teaspoons prepared mustard

Thread skewers, alternating ham and fruits.

Combine pineapple juice with lemon juice and mustard and turn skewers in the mixture.

Broil or barbecue the skewers, turning twice, for 5 to 6 minutes or until apple chunks are tender but not soft. Baste with pineapple juice mixture.
