Recipe(tried): Pea Pod and Chicken Oriental Salad (with pasta and creamy dressing)
Salads - Potato, PastaPEA POD AND CHICKEN ORIENTAL SALAD
FOR THE SALAD:
1 cup spiral macaroni, uncooked
2 cups fresh pea pods, blanched*
2 cups chicken, cooked and cubed
1/2 cup sliced green onions
1/2 cup sliced water chestnuts
FOR THE DRESSING:
1/2 cup mayonnaise
1 tsp. soy sauce
1/4 tsp. pepper
1/8 tsp. ginger
1 tsp. sherry
TO SERVE:
Lettuce leaves
1/4 cup toasted slivered almonds
TO PREPARE THE SALAD:
Cook macaroni according to package directions; drain.
Combine macaroni, pea pods, chicken, onions and water chestnuts.
TO PREPARE THE DRESSING:
In small bowl, blend mayonnaise, soy sauce, pepper and ginger. Add sherry. Pour over pea pod mixture. Mix well. Chill at least 3 hours.
Serve on lettuce and garnish with almonds.
*To blanch the pea pods:
Bring a pot of water to a boil. Fill a bowl with water and ice leaving enuogh room to add pea pods later; set aside. Place pea pods in boiling water. Cook 1 minute (30 seconds for crisper pods). Immediately pdrain and place pea pods in the bowl of ice water to quickly stop the cooking.
