OVEN ROASTED POTATOES WITH HERBS
potatoes

dried herbs
chicken, beef, or vegetable broth
Preheat the oven to 375 degrees F to 400 degrees F.
Peel enough potatoes to fit snugly in whatever baking dish you are using. Pare them down enough to be approximately the same size.
Spray the pan with nonstick cooking spray, put 2-3 Tablespoons butter in the dish, place dish in the oven until butter melts, watching carefully so it doesn't burn.
When butter is melted, sprinkle your favorite dried herbs into the melted butter and place potatoes in dish, turning so all sides are coated with the melted butter. Arrange the potatoes in one layer.
Pour chicken, beef, or vegetable broth around potatoes until broth comes about halfway up the sides of the potatoes. Grind a couple of good grinds of fresh pepper over potatoes and place dish in the oven.
Bake until potatoes are tender and golden brown and the broth has evaporated, turning once carefully for even browning if desired. Baking time is approximately 1 hour depending on the size of your potatoes.
This dish makes your mouth water after the potatoes have been in the oven about 1/2 hour!
