Recipe: Parma Ham and Mozzarella Chicken for Patsy

Parma Ham and Mozzarella Chicken

Simply heat a small knob of butter in a pan add a table spoon of sun-dried tomato paste, pop in two fillet breasts of chicken and toast for 90 seconds on both sides.

Take the chicken out of the pan and leave to rest for a minute. Take some Buffala mozzerella chesse and squeeze some of the moisture out of it. Stretch the cheese and cover one side of the chicken with the cheese. Have some sliced parma ham on hand and wrap the ham around the chicken and cheese.

Pop in the oven for 18 minutes and thats it!

Serve with a light salad and possibly some chips.
