SWEET POTATO TURKEY PIE
3 cups canned or leftover sweet potatoes, drained
3 tablespoons butter or margarine, melted
1/4 teaspoon pumpkin pie spice
2 cups cubed cooked turkey, cut in 1/2-inch cubes
1 can condensed cream of mushroom soup
1 (9 oz.) pkg. frozen French-style green beans, thawed and drained {or 1 1/2 cups leftover green beans}
1 (2 oz.) can mushroom stems and pieces, drained
1/2 teaspoon salt
1/2 teaspoon pepper
2 tablespoons canned French-fried onion rings, crushed
Preheat oven to 350 degrees F.
In a medium bowl, blend sweet potatoes, butter, and pumpkin pie spice until smooth.
In a 9-inch pie plate, lightly spray with vegetable cooking spray, line plate with potato mixture to form a pie shell; set aside.
In a medium bowl, combine turkey, soup, green beans, mushrooms, salt, and pepper. Pour into prepared potato shell. Sprinkle crushed onions over top.
Bake at 350 degrees F for 30 minutes or until hot.
