Recipe(tried): Peach Butter

Peach Butter
Recipe by: Sandy's Recipe Journal

1 1/2 dozen medium fully ripe peaches*
4 cups sugar
1/2 teaspoon ground ginger* -- or to taste
1/2 teaspoon ground nutmeg* -- or to taste

Wash, scald, pit, peel and chop peaches; cook until soft, adding only enough water to prevent sticking. Press thru a sieve or food mill. Measure pulp ( *you should have 2 quarts). Add sugar; cook until thick, about 30 minutes. As mixture thickens, stir often to prevent sticking.

Pour while hot into hot jars, leaving 1/4-inch headspace. Adjust caps. Process pints and quarts 10 minutes in boiling water-bath.

Makes 4 pints

NOTES : The spices are optional, but give a nice flavor to the butter; add to the peach pulp when adding sugar.
