Peach Cobbler
Recipe By : Touch of the Sun 80th Anniversary Cookbook
Serving Size : 6

Batter
1 cup sugar
1 cup flour
1 1/2 tsp baking powder
1/4 tsp salt
1 cup skim milk, room temperature
1/2 cup margarine, melted

Peach Mixture
1/4 cup granulated sugar
2 tsp cinnamon
1/2 tsp nutmeg
1/2 tsp allspice
2 cups peaches, sliced (fresh or canned)

Preheat oven at 350F. Prepare a 8 x 8-inch pan with cooking spray. In a mixing bowl, combine 1 cup sugar, flour, baking powder, salt. Then, blend in milk and margarine. Pour batter into prepared pan. In another mixing bowl, combine 1/4 cup sugar, cinnamon, nutmeg, allspice, and peaches. Toss to coat evenly. Spoon peach mixture evenly over batter. Bake for 45 minutes or until lightly browned. If desired, serve with ice cream.
