Recipe: Peanut Butter Muffins

Breads - Muffins, Quick Breads
PEANUT BUTTER MUFFINS

2 cups flour
1 tbsp baking powder
1/3 cup sugar
1 tsp salt
2 eggs
1/4 cup peanut butter
1/2 cup water
2 tbsp butter, melted

Sift together flour, baking powder, sugar and salt.

Beat eggs; add peanut butter, milk, 1/2 cup water and butter; beat well. Add peanut butter mixture to flour mixture, beat only until blended.

Grease muffin tins and fill 2/3 full.

Bake in 400 degree F oven for about 20 minutes.

Makes 12 muffins
