Recipe: Pecan Power Bars (using whole wheat flour, oats, carrots and prunes)

Breakfast and Brunch
PECAN POWER BARS

1 large egg
3/4 cup honey
1/4 cup canola oil
1 teaspoon vanilla extract
1 cup grated carrots
1 cup chopped pitted prunes
1/2 cup chopped pecans
1 cup whole wheat flour
1 cup instant oats
1/2 teaspoon baking soda
1/2 teaspoon salt
1/8 teaspoon allspice (optional)

Preheat oven to 350 F. Grease a 9-inch-square baking dish.

In large bowl, beat together egg, honey, oil and vanilla until blended. Stir in carrot, prunes and pecans.

In medium bowl, combine whole wheat flour, oats, baking soda, salt and allspice. Stir into honey mixture until well combined. Spread evenly in pan.

Bake 20 minutes or until toothpick inserted in center comes out clean. Cool before serving.

Makes 12 (3x2-inch) bars
