Recipe: Roast Chicken with Anise (may be Russian)

ROAST CHICKEN WITH ANISE

1 whole or cut-up chicken
2 tablespoons butter or margarine
1 tablespoon anise seed
Salt and pepper to taste

Preheat oven to 350 degrees F.

Put the chicken in a Dutch oven or deep casserole dish that has a cover. Add the butter, salt and pepper and sprinkle the anise seeds over the chicken. The amount of anise seed can be changed to suit your individual taste.

Cover and bake at 350 degrees F until the chicken is tender. The length of baking depends on the size of the bird.

This can easily be fixed in a slow cooker. Potatoes can be added toward the end of the baking time. Use the juices in place of gravy.

It may be one that came with my great-great-grandmother when they came from Russia. I wish I'd asked a few more questions about it!" - Rene
