Recipe(tried): Penny's Chili - my favorite!!!!

Main Dishes - Chilis, Stews
PENNY'S CHILI

2 large onions, chopped
Olive oil
3 lbs lean stew meat, cut into small, bite sized pieces
3 cloves garlic, chopped
2 tbsp flour
3 tbsp cumin
3 tbsp chili powder
3 tsp salt
1 tsp cayenne
Abita Amber or other dark brew
1 can consomm
1 can chopped tomatoes
1 can tomato paste
2 cans water
1 can black beans or pinto beans

Saute onions in oil. Add meat and sear. Add garlic.

Mix flour with cumin, chili powder, salt, and cayenne in bowl and add to saucepan a little at a time, stirring well after each addition.

Add beer, stir, add consomm , tomatoes, tomato paste, and water. Cover and simmer 1-2 hours, stirring occasionally. Add beans.

Serve with choice of toppings such as minced fresh cilantro, sour cream, shredded cheddar, and chopped onions. Hot corn bread is good with this!
