Recipe: Fish Stew (Pescado Guisado)

PESCADO GUISADO (FISH STEW)

2 lbs of sea bass cut into halves
Salt
1/2 teaspoon of ground black pepper, divided use
1/2 teaspoon of oregano, divided use
2 tablespoons of oil
4 plum tomatoes cut into 4 quarters
2 green bell peppers
1 small red onion chopped into small cubes
1/2 cup of chopped celery
1/2 cup water
2 tablespoons of tomato paste
1/2 teaspoon of mashed garlic
TO SERVE:
Tostones or cooked white rice

Sprinkle the fish with a teaspoon of salt, a pinch of black pepper and a pinch of oregano.

In a pot heat the oil. Saute the fish on both sides.

Add the remaining ingredients let simmer at low heat for 3 minutes. Adjust salt to taste.

Serve with Tostones or white rice.
