PERKY PEPPERMINT PARFAITS
30 chocolate wafers
2 envelopes Knox Unflavored Gelatine
1/2 cup cold milk
1 cup milk, heated to boiling
1 cup (1/2 pint) heavy (whipping) cream
1/3 cup sugar
2 teaspoons vanilla extract
3 drops red food coloring
1/4 cup peppermint hard candies
1 cup ice cubes (6 to 8)
Break 10 wafers into Osterizer blender container; cover and process 3 cycles at GRIND (HI). Empty container, continue to process remaining wafers.
In blender container, sprinkle Knox Unflavored Gelatine over cold milk; let stand 3 to 4 minutes.
Add hot milk; cover and process at STIR (LO) until gelatine dissolves, about 2 minutes.
Add cream, sugar, vanilla, food coloring and peppermint candies; cover and process at LIQUEFY (HI) until blended.
With blender running, remove feeder cap and add ice cubes, one at a time. Replace cap and continue to process until ice is liquefied. Let stand until mixture is slightly thickened, about 10 minutes.
In parfait glasses or dessert dishes, alternately layer chocolate crumbs with peppermint mixture. Chill until set, about 30 minutes.
Makes about 6 servings
