Recipe: Peter Pan Peanut Butter Cookies

Peter Pan Peanut Butter Cookies

1 cup Peter Pan Creamy Peanut Butter
1 cup granulated sugar
1 cup Parkay Soft Spread (margarine)
2 cups all-purpose baking mix
1/2 cup boiling water

Preheat oven to 400F.

Coat baking sheets with cooking spray.

In a bowl, beat peanut butter, sugar, and Parkay with mixer at medium speed until creamy, about 3 minutes. Blend in baking mix and boiling water.

Drop mixture by rounded tablespoonfuls, about 1 inch apart, onto greased baking sheets.

Bake for 12 to 15 minutes or until golden brown. Remove from cookie sheets; cool completely on wire racks.

Yield: about 30 cookies
