Vicki - Am assuming you are starting with beets straight from the garden.
Wash beets, leave whole. Cook untill done, but still firm. Peeling will
slip right off. Either slice or leave whole, depending on size. Bring to
a boil equal amounts of water, vinegar, and sugar. Place beets in liquid
and reheat till almost boiling. Put in sterilized jars and seal. Thats it.
