Recipe: Picnic Pies
Misc.Picnic Pies
Don't forget to pack the mustard to accompany these mouth watering picnic treats
1 onion
8 oz. (225g) sausage meat
4 oz. (125g) rindless back bacon
8 oz. (225g) plain flour
2 oz. (50g) lard
2 oz. (50g) margarine
salt and pepper
2 tbsps. cold water
beaten egg or milk to glaze
Pre-heat oven to 400F, Gas Mark 6, 200C
Peel and grate the onion into a bowl
Add the chopped bacon, sausagemeat and a pinch of salt and pepper to the bowl
Mix the flour and a pinch of salt in another bowl
Rub in the lard and margarine to a crumb-like consistency
Add water with a knife until dough forms
Roll out the dough on a lightly floured board
Use a three and a quarter inch (8 cm.) round cutter to cut out 12 rounds and line 12 tartlet or patty tins
Cut out 12 smaller rounds with a two and three-quarter (7 cm.) round cutter for lids
Divide the filling between the cases; damp edges, place lids on top and press edges
Re-roll the trimmings to decorate
Brush with beaten egg or milk to glaze
Bake in the top half of the oven for 35 minutes
Remove from tin and cool on a wire rack
Makes 12
