Hi Peter, I want to share with you the marmalade I make for family and friends and have them begging for more. I usually have this around the holidays to give away but keep a few jars in the cupboard throuout the year. It is a really good marmalade and easy to make. I hope you enjoy it as much as we do. PINEAPPLE AND ORANGE MARMALADE
3 oranges, thinly sliced crosswise and seeded
water, as needed
1 lemon, thinly sliced crosswise and seeded
2 cans (1 lb. each) crushed pineapple in syrup
8 cups sugar
Quarter each citrus fruit slice.
In a large pot, just cover the citrus fruit barely with water. Simmer 45 minutes or until peel is soft.
Add pineapple and syrup. Simmer 15 minutes
Add sugar. Stir until sugar dissolves. Increase heat; boil rapidly 20 to 25 minutes or until marmalade reaches 221 degrees F.
Remove from heat. Let stand 10 minutes.
Meanwhile, wash 12 1/2 pint jars in hot soapy water; rinse. Keep hot until needed. Prepare lids as manufacture suggests.
Stir marmalade well; ladle hot into 1 hot jar at a time. Wipe rims with a clean cloth and attach lid. Fill and close remaining jars.
Place in canner. Process in boiling water bath for 10 minutes.
Makes 13 1/2 pints
