Recipe: Chicken Satay with Spicy Peanut Sauce (using chicken tenders or pork tenderloin)

CHICKEN SATAY WITH SPICY PEANUT SAUCE

3 tablespoons soy sauce, divided use
1 tablespoon vegetable oil
2 teaspoons brown sugar
1 1/2 pounds chicken breast tenders
1 package wooden skewers, soaked in water
FOR THE SPICY PEANUT DIPPING SAUCE:
1/2 cup chicken broth
1/2 cup creamy peanut butter
2 teaspoons hot sauce
1/4 teaspoon garlic, minced
2 teaspoons sugar
1 fresh lime, juiced

TO MARINATE THE CHICKEN:
In medium bowl, combine one tablespoon of the soy sauce, oil and brown sugar. Mix well. Add chicken tenders and mix to coat. Marinate in refrigerator for 1-2 hours.

TO MAKE THE SPICY PEANUT DIPPING SAUCE:
In another bowl, make dipping sauce with the remaining soy sauce, broth, peanut butter, hot sauce, garlic, sugar and lime juice. Set aside to allow flavors to blend.

WHEN READY TO COOK:
Heat broiler (can also be cooked on the grill).

Thread 2 tenders per skewer. Place chicken skewers on a broiling pan.

Broil until cooked through and browned, about 4-5 minutes per side or until done.

Serve with the Spicy Peanut Dipping Sauce.

VARIATION:
This is really good using pork tenderloin, instead of chicken!
