Recipe: Pineapple Party Dessert

Pineapple Party Dessert

This is easy and delicious and makes a lot. It was the first dessert to go at the party. Guarantee you'll be asked for the recipe. It's light and refreshing and most delicious.
Serves 12 or more depending how you cut the pieces.

1 lb pkg marshmallows
1 cup pineapple juice
1 pint heavy cream
18 graham crackers
1/3 cup melted butter

In top of a double boiler melt the marshmallows and juice, stirring constantly until smooth. Set aside to cool completely. Grind crackers to make crumbs and mix with the melted butter or margarine. Scatter half of the crumbs in a 9x13-inch pan, reserve other half for the top. Meanwhile whip cream and fold into cooled marshmallow mixture. Pour into pan. Sprinkle on reserved crumbs over top of dessert. chill overnight. Cut into pieces to serve.
