Recipe: Piquillo Pepper Salad with Raisins and Pine Nuts

PIQUILLO PEPPER SALAD WITH RAISINS & PINE NUTS
(Ensalada de Piquillos con Uvas Pasas y Pi ones)

"...Piquillo peppers are available in specialty food shops and by Mail order and are well woth the extra effort to find them. Otherwise, select jarred pimentos that have a bright red color...".
Serves 4 to 6

2 tb raisins
One 12 ounce jar of pimentos, preferably Piquillos, cut in 1/2 inch strips
2 tb pine nuts
2 garlic cloves minced
4 tb extra virgin olive oil
salt to taste
2 tb minced parsley or Cilantro

Soak the raisins in warm water for about 10 minutes. Drain. Combine the raisins in a bowl with all the other ingredients, except the parsley. To serve, arrange on individual dishes & sprinkle with parsley.
