Recipe(tried): Polish Fancy Fruitcake (Keks)

Misc.

This is not a "usual" fruitcake, but the only one you can find in Poland (with several variations of course), and the only one I make:

Fancy Fruitcake (Keks)

1/4 cup dry bread crumbs
1 1/2 cups unsalted butter or margarine, room temperature
1 cup sugar
5 eggs
2 tablespoons Polish vodka (or other)
1 tablespoon vanilla
2 to 2 1/2 cups flour
2 tablespoons baking powder
1/4 cup candied orange peel (optional)
1/2 cup chopped walnuts
3/4 to 1 cup raisins (golden and regular)
1/2 cup chopped pitted prunes
1/2 cup chopped dates
1/2 cup chopped dried figs (optional)

Preheat oven to 175 C (350 F). Line 2 (8 x 4") loaf pans with foil so ends overlap pan sides; grease foil.
sprinkle bread crumbs evenly over greased foil. In a large bowl, beat butter and sugar 5 minutes or until smooth and creamy. Add eggs, 1 at a time, beating after each addition until smooth. Blend in vodka and vanilla. Reserve 3 tablespoons flour. Gradually add remaining flour and baking powder to mixture, stirring until smooth. In a small bowl, combine orange peel, walnuts, and the rest of dry fruit and reserved flour; toss to coat nuts and fruit. Work fruit and nut mixture into dough. Divide dough between prepared pans. Bake 35 to 40 minutes or until a tester inserted in center comes out clean. Remove loaves from pans by lifting foil. Cool completely on a rack. Makes 2 fruitcakes.

Hope you'l enjoy it,
Ana
