Tina, there are many poor man's pie recipes. Some are main dishes with meat, and others are desserts. Here is one I find that may work for you.
Poor Man's Pie

My mother grew up in a tiny coal-mining village in West Virginia, so we ate a lot of what we call "mountain food" as kids. This is a very easy, quick recipe with virtually no rules. You may use any type of fruit, and it doesn't matter whether it's fresh, frozen, canned, or part of a jar of Simply Fruit preserves. Add sugar, cinnamon, or vanilla if you like. Use what you have on hand, and let the kids help. This is also a good camping recipe.
1 lb. bite-size berries or fruit pieces
1/4 cup water or fruit juice (reduce if using frozen or canned fruit)
1 Tbs. lemon juice (may use honey or sugar to taste, optional)
Combine above ingredients and cook in small Dutch oven or large saucepan over medium heat.
2 cups Bisquick baking mix
2/3 cup milk
Stir baking mix and milk together to form a soft dough. Drop by spoonsful onto bubbling fruit mixture. Reduce heat and cook uncovered for 10 minutes. Cover and cook 10 minutes more or until dumplings are firm. Serve hot.
This is not a pretty dessert, but it is tasty (even my father-in-law will eat it). And, of course, like all pies, it can be served a la mode. Enjoy!
