Used to live in Iowa, they were also famous for their popcorn besides their kernel corn.
Here are some recipes.
POPCORN CAKE
4 qt. popped corn
1 lb. small gumdrops
1/2 lb. salted peanuts
1/2 c. butter or margarine
1/3 c. salad oil
1 lb. marshmallows
Grease tube pan with butter. Mix popped corn, candy and
nuts. Melt butter and oil in saucepan. When melted, pour over
popcorn mixture. Press into greased tube pan. When cool, run
knife around edge of pan to help get cake out. Turn upside-
down on plate. Cut with serrated knife.CORN SPOON BREAD
2 eggs, slightly beaten
1 (8 1/2 oz.) can corn,
drained
1 (8 1/2 oz.) cream-style corn
1 c. sour cream
1/2 c. melted butter (1 stick)
1 (8 1/2 oz.) box Jiffy
cornbread mix
1 c. grated Colby cheese
(optional)
Mix all ingredients and pour into a greased 2 quart
casserole dish. Sprinkle grated cheese on top, if desired.
Bake in a 350 degrees oven for 30 to 40 minutes or when knife
inserted
into center comes out clean. (Used as a side dish.)CORNY CORN MUFFINS
1 c. whole wheat flour
1 c. corn meal
1/4 c. sugar
4 tsp. baking powder
1/2 tsp. salt
2 eggs
1 c. milk
3 Tbsp. butter
1 c. cream style corn
Preheat oven to 425 degrees. Combine flour, cornmeal, sugar,
baking powder and salt in large bowl. Combine eggs, milk,
butter and corn in bowl. Add to flour. Pour in muffin pan.
Bake 20 minutes.
