Recipe(tried): Pork Chops Barbecued with Mashed Potatoes

PORK CHOPS BARBEQUED WITH MASHED POTATOES
(Women's Day...December 1948)

1 cup onion, chopped
3 T. vinegar
2/3 cup ketchup
1/2 cup water
1 tsp. garlic salt
2 tsp. salt
1/4 tsp. pepper
1/4 tsp. Tobasco sauce
1 T. Worcestershire sauce
2 tsp. prepared mustard
4 end pork chops ( about 1 1/2 lbs.)
3 cups hot mashed potatoes

Mix onion, vinegar, ketchup and seasonings together in 2 1/2 quart casserole. Add pork chops, cover and bake in a moderate oven (350 degrees) for 1 hour. Uncover, spoon sauce over and continue baking 45 minutes. Spoon mashed potatoes lightly around edge of casserole and serve.

If you prefer, serve over large baked potatoes ( put the potatoes in the oven with the casserole for the last hour.)

** Note: this recipe cost 90 cents when it appeared in the magazine! I have served it MANY times when my family was growing up. Bon appetit to your Dad!!!
