Recipe: Potato Candy Balls

Hi Leah;
I found this recipe on the net a while back, but haven't tried it yet. Sounds like what you are looking for.
POTATO CANDY BALLS
1 potato (5-6 oz.)
1 box confectioners sugar
1/8 tsp. salt
1/4 tsp.vanilla
4 0zs. coconut
6 squares unsweetened chocolate

Boil potato, drain and mash. add 1/2 box sugar and the salt. Add vanilla and coconut; add as much sugar as needed to make mixture stiff. Shape into balls and chill for 2 hours. Melt chocolate and dip balls. Let excess drip back in pan and put balls on waxed paper to set.
