Recipe(tried): Premio Hot Italian Sausage and Pepper Grinders

Hi Sherry :-) I tried this recipe that Ivana, Washington, DC posted and it is very good. She was going to serve it over pasta. I used it to make Italian Sausage Grinders (hoagies, Submarine Sanwiches - your choice of what you call them). The recipe really calls for a lot of peppers so I actually used 12 or 2 lbs. of Italian sausage in the reipe. I used Perri brand sausage since that is the brand that is most available here. I mixed hot and sweet sausage. I found this to be a wonderful recipe as far as cooking the sausage. It came out really well. I did use some oregano as wellas the basil. I lightly toasted the rolls under the broiler, halved the sausage lengthwise or sliced it, piled it, the peppers and sauce on the bottom half of the roll, then topped it with sliced provolone and returned it to the broiler to melt the cheese. I thought they tasted great :-)!! It's a good and easy recipe, can be made ahead and refrigerated or frozen (not the sandwich - just the sausage and peppers.)

PREMIO HOT ITALIAN SAUSAGE & PEPPERS

8 Links Premio Hot or Mild Sausage
6 Green Peppers
3 medium Onions
4 medium Garlic Cloves
2 tbsp. Dried or Fresh chopped Parsley
2 tbsp. Dried or Fresh chopped Basil
16 oz. can crushed Tomatoes
Salt and Pepper to taste

Preheat oven 350 degrees

Wash peppers, remove core and seeds. Cut into 1" strips.

Slice onions and set aside.

In baking pan, bake sausage approximately 45 minutes. Turn to brown evenly.

Add peppers, onions, garlic, parsley, basil, crushed tomatoes, salt and pepper.

Bake for an additional 35 minutes until peppers are fork tender.
