Recipe: Lemon-Sweet Cucumbers

2 cups thinly sliced pickling cucumbers
1/4 cup sugar
1 tablespoon fresh dill (or 1/2 teaspoon dried)
1 teaspoon fresh lemon juice
1/2 teaspoon lemon zest
1/2 teaspoon cider vinegar
1/4 teaspoon salt
Place cucumber slices in bowl of ice water; let soak until crisp, about 30 minutes. Drain well in colander for at least 10 minutes.
Whisk together sugar, dill, lemon juice, lemon zest, vinegar and salt in medium non-reactive bowl. Add cucumbers; stir to coat. Cover; refrigerate for at least 4 hours or overnight.
Serve chilled.
Makes 4 servings (1/4 cup each)
