I'm working on a family cookbook-ho0e to get it done by Christmas. Here's the prune cake passed down by my Great Grandmother.

MOM'S PRUNE CAKE

Amount Measure Ingredient -- Preparation Method

1 cup buttermilk
1 teaspoon baking soda
1 1/2 cups sugar
1 teaspoon nutmeg
1/2 teaspoon salt
1 teaspoon cinnamon
1 cup oil
3 eggs
2 cups flour
1 cup prunes -- steamed and chopped
1 cup pecans -- chopped finely

Grease and flour three 9-inch round cake pans.
Preheat oven to 350 degrees.
Combine buttermilk and soda in measuring cup: set aside.

In a large mixing bowl mix on low speed: sugar, nutmeg, salt, cinnamon and oil.
Add eggs, mixing thoroughly with mixer.
Blend in flour.
Mix on low speed as buttermilk mixture is gradually added.
Stir in prunes and pecans.

Spoon 1/3 of mixture into each cake pan.
Bake for 25 minute or until center springs back when lightly touched.
Cool on wire rack.

MOM'S PRUNE CAKE ICING

Recipe Amount Measure Ingredient -- Preparation Method

1 cup butter
2 cups sugar
1/2 cup evaporated milk
4 ounces dates -- chopped
1 cup pecans -- chopped

MIX BUTTER, SUGAR, MILK AND DATES.
COOK OVER MEDIUM HEAT UNTIL IT BEGINS TO THICKEN.( sOFT BALL STAGE)
ADD NUTS AND BEAT WITH SPOON UNTIL IT COOLS SOME SOME AND THICKENS MORE.
SPREAD ONTO CAKE.
**MAKE AND FROST CAKE THE DAY BEFORE-IT'LL BECOME MORE MOIST FROM ICING.

NOTES : This is an old family recipe. Of course, Mom (Rachael) makes it best. All of us look forward to holidays because we know there has to be a Prune Cake. Becky entered the recipe in the New Orleans-Times Picayune recipe contest. It won an honorable mention and was published in the paper.
