Recipe(tried): Pumpkin Cookies (no eggs, 1970's)

A friend gave me thie cookie recipe years ago, 1970's. It is the only pumpkin cookie recipe, I use . Enjoy!

PUMPKIN COOKIES

No eggs needed in these moist, soft cookies.

1 cup C and H Golden Brown Sugar, firmly packed
1 cup cooked or canned pumpkin
1/2 cup oil
1 teaspoon vanilla
2 cups sifted all-purpose flour
1 teaspoon soda
1 teaspoon baking powder
1/2 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground nutmeg
1/4 teaspoon ground ginger
1 cup raisins
1/2 cup chopped nuts

In mixing bowl beat together sugar, pumpkin, oil and vanilla.

Sift together dry ingredients; add and stir until smooth. Blend in raisins and nuts. Drop by spoonfuls on greased baking sheet.

Bake at 350 degrees F for 12 to 15 minutes.

Makes 3 to 4 dozen
