Recipe: Quick Gazpacho

Quick Gazpacho
Source: Queen Anne Goes to the Kitchen, Third edition, by The Episcopal Women of St. Paul's Parish. Centerville, Maryland
Makes 4 cups

2 cups salsa (mild, medium, or hot, to taste)
2 cups V-8 or tomato juice
1 cucumber
lime juice to taste

Mix together in a blender or food processor. Chill for an hour or more. Serve with sour cream or a lime wedge.
