QUICK GERMAN POTATO SALAD

4 cups boiling salted water
4 cups peeled sliced potatoes
1 cup chopped celery
6 slices bacon
1 cup chopped onion
1/4 cup cider vinegar
2 tb light brown sugar
2 tb water
1 tsp salt

Pour potatoes into boiling water in large saucepan. Boil until just tender. Drain potatoes. Put in large bowl with celery. Fry bacon until crisp in a large skillet; remove and drain on paper towels. Pour fat into cup and return 1/4 cup of drippings to skillet. Saut onion in drippings until soft. Stir in vinegar, brown sugar, 2 tb water, salt and pepper and bring to a boil; pour over potatoes mixture in the bowl and toss to coat. Serve warm. Buen Provecho!
