Recipe(tried): Quick Tortellini and Fagioli

I answered your request for Tortilla Soup on the What's for Dinner Message Board and knew in my heart of hearts you were really looking for Tortellini!

So, here you are ----

1 T. olive oil
1 onion, diced
2 celery stalks, diced
1 carrot, cut in 1/2" dice
1 14 oz. can chicken or vegetable broth
2 1/2 c. water
2 large garlic cloves, minced
1 8 oz. can tomato sauce
1 8 oz. can white beans
1 T. chopped fresh basil or sage (or 1 t. dried)
9 oz. frozen tortellini, cooked according to package directions

Heat oil in heavy saucepan over medium heat. Add onion, celery, carrot and saute three minutes. Add broth and water. Cover and bring to a boil. Cook over medium heat 5 minutes.

Add garlic, tomato sauce, beans, pasta and basil. Heat through. Taste and adjust seasonings.
