Recipe(tried): Ramen Noodle Salad

Ramen Noodle Chicken Salad
I like lots of crunchies and they seem to disappear everytime someone walks through the kitchen. I will give approximate measurement as I seldom measure anything when I make this.

1/2 cup Loriva peanut oil(this brand is cold pressed and has much more flavor than any other brand I've tried).
3 packages ramen noodles
1 cup slivered almonds
1/4 cup sesame seeds

Heat a 12" skillet with peanut oil. Crush noodles in the package then open and pour into the pan(discard flavoring packets--I try to avoid MSG). Add slivered almonds. Cook over medium heat stirring occaisionally until brown, then add sesame seeds(They cook much quicker. Remove from pan and reserve until salad is served.

1 whole boneless chicken breast chopped in 1/2"x1" pieces
2 T soy sauce
garlic to taste

Add little more oil if neccessary to skillet and turn up the heat and cook quickly, allowing liquid to evaporate and chicken to brown, but don't burn pan drippings. Put chicken aside and refrigerate if not serving immediately.

Dressing

3/4 cup rice wine vinegar
3/4 cup sugar
additional peanut oil
1 tsp sesame oil
2 green onions very finely chopped

Add vinegar to warm pan and dissolve any brown stuff that is in the pan into the vinegar. Add the sugar and heat until dissolved. The amount of sugar may be less if you like it less sweet. Add sesame oil and up to 1 cup peanut oil to dressing (less if you are watching your fat). Whisk together. Throw green onions in the hot dressing just before tossing salad. Sometimes I add hoisin 1-2 T.or1/2 tsp garlic hot pepper sauce. Some times if we are grilling I grill the chicken ahead for the next day. I've also made it without chicken just a side dish.

To assemble salad, cut up head lettuce or field greens or whatever type of lettuce you like (approx 1 gallon of greens). Make sure greens are dry. Immediately before serving toss everything together adding warm but not hot dressing to the bowl adding cruchies last. This may serve 2-3 depending how hungry they are. I seems like no matter how much I make there is never any left.
